Food Pron
Not done any food threads for a bit
I've been doing stuff (getting fatter mostly)
Been doing fatties, which is a load of streaky bacon woven together, then a layer of pork mince, then a chorizo at the end and all rolled up and cooked for 4-5 hours then basted a couple of times in my sticky BBQ sauce at the end
And been trying my hand at brisket too, big ol hunks o meat rubbed in just salt and pepper and smoked for hours
Here's a fatty and a brisket going
And an awesome sandwich too, Saint Augur spread on the bread, then the beef, then some salsa and lettuce
I didn't get a vid of slicing the brisket, just of trying to seperate the two bits of muscle after the first was cooked
And this weekend I thought I'd try some turkey, so I got a turkey crown from Bookers, 5.5kg, put it in a plastic container submersed in a brine (water, sale, cinnamon sticks, bay leaves and a star anise) and in the fridge for 3 days and put it on the smoker yesterday (Sunday), I can honestly say it's the best turkey I have ever had.
So there you go. Just a little food update, remember, I put myself through this crap so you don't have to.

Funnily enough I thought of you recently. A family a few doors up from us has just started up a small business selling smoked goods. They've been doing it for themselves for years but were convinced to go public. At their first sale (at our village produce market) I bought some smoked back bacon and some smoked salt (nice as a condiment on stuff). They are doing salmon and gravadlax for Xmas, next month.
I still remember your first post on this and still harbour a desire to build one m'self, or at least try and re-purpose my kettle BBQ to do a similar job.

Ah, they're doing cold smoking, I keep meaning to have a go myself, a friend gave me some smoked cheese and garlic a while ago and it had a nice subtle hint of flavour in the dishes we put it in.
As far as re-purposing your Kettle goes, yeah baby, as long your BBQ has a lid you can do it, in fact I think you should. Notice the foil wall that contains the coals, I just thought I'd try it on this go but you don't need it (see the document link below the picture), It was just there to help the heat go up and circulate that way, instead of radiate sideways, just experimenting really)

And don't forget, just like motorbike, there is no such thing as a 'season' for BBQing, if you got coals and beer, your on son, and you don't just have to use it for BBQing, not that I am a geek but yes, I made a big ass grate for mine so I could get bigger pots and pans on it

Had to do a load of work in the fields this weekend so took the BBQ up
We had steak and tatties
Got the BBQ going while we started pulling down some barbed wire fencing (that was fun NOT)
Got the tatties on
Had a brew break
and when the tatties were done, put them to the side and got the steak on and then some garlic bread
Must be the most exclusive restaurant in Gloucester

Screw it, anyone fancy a BBQ at our place?
I would offer to make a weekend out of it and do a route and camp in the fields but everyone would have to use the facilities at our house and it's only a little bungalow, it'd fall apart after a weekend of bikers.
But I'm deffo up for a BBQ and could put up a few people.
We could vote on the food wanted and I'll price it up we share the cost of the food, I love you but this stuff costs more than frozen sausages and burgers.

Snow? We aint seen any snow, had no date in mind, Ijust thought of it (not run it past the mrs yet, but it'll be OK, she knows what's good for her JUST DON'T TELL HER I SAID THAT)

Just been watching the vid of the bacon bomb - excellent stuff; got a lot of mileage that idea. Grandmothers and eggs spring to mind and don't know if you do this anyway but it looks as though it would be easier to roll and put on/in BBQ/oven if you put your streaky on a piece of greaseproof paper at the start - just IMHO.
Can't wait for a taste - when did you say we could come over ???
