I don't know the Cat well enough yet, but as the problem was cured for a short while after disturbing the plugs and carbs, I'd say check the plug caps and leads. not sure what sort of coil or igniter set-up these have but that would probably make it run on two not three and be a problem from start up.
Perhaps vacuum hoses split? Sounds more like a carb/ mixture fault if it won't run warm.

I had a similar issue and it turned out to be a plug cap; they just unscrew from the end of the HT wire. You can test the resistance across them; they're supposed to be 10k Ohms. They're not cheap though - I found a set on eBay.
