I just made myself some fluffy american pancakes. couldn't be bothered to take photos but here's a reconstruction:

I made a caramel sauce (my first time - who knew it was that easy?!) and had pancakes with sliced banana and caramel sauce. AWESOME, even if I do say so myself!

Thanks Tel - I got all excited seeing the packet of "pancake mix" in the kitchen cupboard...which was all forgotten about until about 20 minutes ago. And apparently 11pm is "too late for pancakes"! Did you ever hear such nonsense?!
